When I first read that they planned to monetize using data I quite literally rolled my eyes… but I was happy to be surprised that they legitimately are using the data they capture about customer demand relative to location to make money (if they do actually make money). Way too many startups these days state their revenue model as some form of selling data, so I was skeptical. Anyway, I loved this article and how you broke down their business model. They are really in the real estate business if you ask me, they have the “supply chain” in place to facilitate perfect real estate deals for restaurants- but they chose to open pop-up restaurants themselves which is risky and time consuming.
